Blueberry Pecan Glazed Chicken

 

4 bone in, skinless chicken breasts

Sauce:
1 tbsp diced onion
1/4 tsp fresh garlic
1 tbsp butter
1 1/2 cups blueberries
1 tbsp maple syrup
1 tbsp chopped pecans
1/4 tsp cider vinegar
pinch salt & pepper

Preparation:

  1. Preheat barbecue on medium heat.
  2. Grill chicken breasts, bone side down, for about 14 minutes.
  3. Turn chicken and continue grilling until a meat thermometer inserted into chicken reads 165°F (74°C) (about 10-14 minutes)
  4. Saute onion and garlic in butter for 2 minutes.
  5. Add remaining ingredients, bring to a boil then reduce heat and simmer until sauce is slightly thickened.
  6. Spoon sauce over chicken breasts and serve immediately.
